At DollarShot Distillery Canada Limited, our White Spirits line is engineered through advanced R&D—leveraging premium feedstocks, state-of-the-art distillation architecture, and multi-stage purification—to produce exceptionally clean vodkas and characterful gins that meet the most exacting technical and sensory benchmarks.


1. Feedstock Selection & Characterization

  • Grain Profile (Vodka Base): We source food-grade winter wheat (protein ≤ 10%, moisture ≤ 5%), tested via NIR for starch-to-protein ratio (> 2.5:1) and β-glucan (< 60 cP). Milling yield is optimized to ≥ 75% extraction.
  • Neutral Spirit Base (Gin & Vodka): Spirit runs achieve ≥ 96% ABV (“neutral” cut) with methanol < 10 mg/L and total higher alcohols < 100 mg/L, as confirmed by GC-FID profiling.

2. Fermentation & Distillation

  • Enzymatic Saccharification: Programmable infusion mash schedules (55 °C protease rest, 65 °C β-amylase rest, 72 °C α-amylase rest, 78 °C mash-out) with gluco- and pullulanase dosing (0.02 g/L) deliver fermentable extract > 90% theoretical.
  • Yeast Performance: Proprietary S. cerevisiae strains are propagated in aseptic seed trains to maximize ethanol yield (≥ 15 % v/v in 5 days) and minimize diacetyl (< 0.10 mg/L).
  • Dual-Column Distillation (Vodka): Two continuous columns (20 theoretical plates each, reflux ratio ~40:1) produce heart fractions at 95.5–96.5 % ABV. Automated cold-head and hot-tail cuts are executed using inline density (Anton Paar) and temperature (± 0.1 °C) controls.
  • Hybrid Still & Pot-Still Gin Distillation: Neutral base is proofed to 60 % ABV and fed to a 2 000 L copper pot still tandem with a 4-plate rectification column. Heads/tails cuts are managed by torque-controlled condensers, preserving desirable monoterpenes and sesquiterpenes.

3. Multi-Stage Purification

  • Crossflow Microfiltration: A 0.65 µm membrane stage removes yeast and protein haze while retaining volatile aroma compounds.
  • Nano-Filtration Polishing: Proprietary 0.02 µm ceramic membranes strip residual trace sulfur and aldehydes, maintaining key esters (ethyl acetate ≥ 120 mg/L) for mouthfeel.
  • Activated Carbon & Kieselguhr: Final polishing uses food-grade carbon (25 kg/m³) followed by diatomaceous earth to achieve turbidity < 0.05 NTU and optical clarity > 98% T.

4. Botanical Infusion & Flavor Extraction (Gin)

  • Botanical Bill & Maceration: A 10-botanical recipe—juniper (70 g/L), coriander seed (20 g/L), angelica root (5 g/L), orris root (3 g/L), citrus peels, cardamom pods, and proprietary spice extracts—is macerated in neutral spirit at 50 °C for 4 hours under gentle agitation.
  • Vapour-Infusion Technique: Following maceration, a Carter-type botanical basket conducts a secondary vapour infusion during distillation, capturing high-volatility monoterpenes.
  • Fractionated Collection: Botanical distillate is split into heads (ester-rich top), heart (aromatic mid-cut at 68–72 % ABV), and tails (terpene-dense bottom) to optimize flavor clarity and balance.

5. Batch Blending & Final Adjustments

  • Analytical Blending: GC-MS flavor fingerprinting guides bench trials to adjust botanical ratios, targeting terpene profiles (α-pinene, limonene) within ± 5% of the master standard.
  • Proofing & Mineral Balance: Final spirit is proofed to 40% ABV using de-ionized water replete with controlled mineral content (Ca²⁺ 50 mg/L, Mg²⁺ 10 mg/L) to enhance mouthfeel. Inline density monitoring (± 0.1 g/mL) ensures consistency.

6. QA/QC & Traceability

  • In-House Laboratory: Equipped with GC-FID, GC-MS, HPLC, and FT-IR to quantify congeners, sugars (< 0.5 g/L), and volatile acidity.
  • Third-Party Verification: Accredited labs test each batch for methanol (< 10 mg/L), heavy metals (Pb, Cd < 0.05 mg/L), and microbial load (< 10 CFU/mL).
  • Digital Batch Documentation: A LIMS system records every process parameter—from mash pH and fermenter logs to distillation cut times and filtration cycles—accessible via GS1-compliant QR codes on each bottle.
